Jump to RecipeWhat makes salt-free bread different?
Salt-free bread is different from regular bread in several key ways, especially when it comes to its health benefits for people with conditions like CKD or those on dialysis:
- Sodium Content: The most obvious difference is the absence of salt, which significantly lowers the sodium content. Regular bread contains salt as a key ingredient, contributing to daily sodium intake, which can lead to high blood pressure, fluid retention, and additional strain on the kidneys. For CKD patients, managing sodium is essential to avoid complications.
- Flavor: Salt enhances flavor, so salt-free bread tends to have a milder or slightly bland taste compared to regular bread. However, bakers may use other ingredients or techniques to maintain a pleasant taste, like adding herbs, seeds, or spices.
- Texture: Salt plays a role in the texture of bread, helping to control yeast fermentation. Salt-free bread might have a different crumb structure or rise slightly differently because the yeast behaves differently in the absence of salt.
- Health Benefits: For individuals with CKD or those undergoing dialysis, reducing sodium intake helps control blood pressure, prevents fluid buildup, and supports overall heart and kidney health. Salt-free bread is tailored to these dietary restrictions, making it a safer option for those managing their kidney condition.
- Ingredient Adaptation: Without salt, other ingredients may be carefully balanced to maintain the dough’s consistency, rise, and overall quality of the bread.
In summary, salt-free bread offers a healthier alternative for people who need to limit sodium, while providing an option to enjoy a staple food like bread without the risks associated with high sodium consumption.

Ingredients
500g of all purpose flour.
20 grams of flax-seeds
20 grams of fresh baker’s yeast or 1 packet of dried baker’s yeast.
300 ml or 10 ounces of water.
Directions
- In the bowl of a mixer or bread machine, pour in the water, flax-seeds, flour, and then the yeast.
- Mix for 5 minutes until you get a smooth, supple dough. Form a ball and place it in a large bowl, cover with plastic wrap or a clean cloth, and let it rise for 45 minutes.
- Then punch down the dough to release the air, and shape your bread (I use a loaf pan to give the bread a nice shape).
- Let it rise again for at least 1 hour at room temperature.
- Bake at 220°C or 428°F for 35 minutes.
